Easy? Check! Flavorful? Check! This easy crock pot recipe is a great substitute for the typical fried and unhealthy sweet n’ sour chicken that you’ll find at most Chinese food restaurants.
The big difference is…this one will keep you lean!
Serve over brown rice, or for a lower carb option, with a serving of steamed broccoli.
Easy Crock Pot “Lean” Sweet n’ Sour Chicken (makes 6 servings)
Six 3 oz chicken breasts
1 red onion, chopped in large pieces
One 14 oz can no-salt added tomato sauce
1/3 cup low carb ketchup
1/3 cup dijon mustard
1 cup pineapple chunks (canned in juice, or fresh)
1/4 cup stevia for baking (If you use packets, then 6 packets)
1) Cut raw chicken into large chunks.
2) Place everything but the chicken in the crock pot and mix until blended.
3) Place in raw chicken and stir until combined.
4) Cook on HIGH for 3-4 hours or LOW for 5-6 hours.
