The Reason I HATE Vegetables

Ok so I don’t actually hate vegetables…

But vegetables and I have been “off and on” for years…

It is sort of a love hate relationship I guess…

We break up…then we make up.

One day I told veggies it was over and that I wanted to see other people (I thought soda, ice cream, and pizza were so sexy back then)…but veggies didn’t like that…

So she went all jealous psycho ex on me and gave me all of the nutritional deficiencies she could.

I still hate her for that…

What a bitch move.

Sigh…

Here’s how all of the drama started.

I remember those days as a kid when I would come inside from a long day of playing pickup baseball or freeze tag…and be absolutely starving…and mom would yell…Dinners Ready!!!

My brothers and I would all rush over to the table hoping for pizza…only to see a pile of healthy veggies staring us dead in the face.

Of course on the outside I flashed my biggest and brightest fake smile and always said “wow thanks mom!”

…while saying to myself on the inside…f*ck, sh*t, goddamnit broccoli & lima beans again?!? (yes 10 year olds do know swear words)

The sucky part about the whole deal was that mom would never let you excuse yourself from the table until all of your veggies were gone.

But I was a smart kid…and smart kids always have a master plan.

So I devised the brilliant strategy of feeding my lima beans to the air conditioning vent that was on the floor by my spot at the kitchen table…

Problem solved. Jamin 1. Mom 0.

WINNING.

I think my brother still hates me because he didn’t think of it first…and because his dinner seat was in the direct line of mom’s highly sophisticated sniper vision.

Sucks for you bro!

But a lot has changed since those days…

These days I don’t have to worry about my air conditioning vents blowing out disgusting broccoli fart smells all summer because I’ve long since abandoned my “I Hate Vegetables” campaign and now eat veggies 3-4 times per day (at least). I guess you could say I have finally given up my wild ways and settled down with veggies and all of the positive things that come with them once and for all.

But me and lima beans are still not speaking to each other due to irreconcilable differences…

I will never eat lima beans, even if my life depended on it (those little bastards are disgusting) but I do recognize the power packed into those often disgusting things we all affectionately call “healthy vegetables” :D

All jokes aside, it is one thing to diss veggies as a kid, but if you are 25 years old or older and still feeding your broccoli to your dog…you’ve got problems…more specifically, health problems.

And I’m not sitting here telling you that you need to convert into a vegetarian…far from it…

…but with all of the safety issues and health concerns surrounding meat these days…a plant based diet is starting to look less and less “insane”.

While I’m not on the 100% meatless diet train yet, I have gone raw for long stretches at a time and do recognize the power of incorporating natural raw foods into one’s diet. In fact, I recommend eating a 50% raw diet. That’s one of the best ways to remain healthy.

The reason is simple.

Raw foods are chock full of more enzymes, vitamins, minerals, fiber, and bulk because they are “living” foods and…quite honestly, a raw food diet plan isn’t all that bad.

In fact, know quite a few bodybuilders, trainers, and fitness experts that are vegetarian and they look and feel great. Take my buddy Nathane Jackson for example, he is a raw vegan fitness model who is pretty jacked at around 200 pounds and 5 or 6 percent body fat.

Plus my buddy Jason Ferruggia (a muscle building expert and strength coach) also advocates the use of a plant based diet to build muscle (and he teaches people from all over the world how to build muscle using a vegetarian diet.

I know a ton of people hate on plant based recipes and say they are gross…but sometimes you just can’t be scared to try new things…so I’m going to break all of you veggie haters in easy.

Not all healthy recipes are gross (sometimes you have to blame the chef…just sayin). Just try this Raw Pineapple Cheesecake recipe and see if you change your tune. There are no unhealthy ingredients in this thing and it is absolutely delicious. You will be blown away when you taste it, considering there’s no dairy and that it’s completely raw. Once you taste it…you’ll be a BELIEVER. Oh and for you wise asses…don’t ask me why it is called cheesecake when there is no cheese/dairy involved. Just taste the sucker before you throw hate my way. Ok? :D

Raw Pineapple Cheesecake

Ingredients

Crust
• 1.5 cups of raw unsalted almonds
• 6 dates, pitted
• ¼ teaspoon vanilla extract
• Pinch of sea salt

Filling
• 1 cup raw unsalted cashews
• 2 cups fresh pineapple
• ½ cup coconut oil
• ½ cup of raw honey
• 1 lemon, freshly squeezed
• 1 tsp vanilla extract
• Pinch of sea salt

Directions

Combine the crust ingredients in a food processor and blend with an S-blade until the crust clumps together on the sides. Pour crust ingredients into a 9” pie plate and flatten out from the center to the sides.Put aside. Combine all the filling ingredients in a blender and blend until pourable. Pour filling into pie plate over crust and let sit in the fridge for 1.5 hours – 2 hours or until filling hardens. Serve cold with or without vanilla cream topping (recipe below).

Vanilla Cream

Ingredients

• 1 cup raw cashews (soaked for at least
4 hours)
• 1 cup coconut meat
• ½ cup water
• ½ cup maple syrup
• ½ cup coconut oil
• 3 tbsp vanilla extract

Directions

Combine all ingredients in food processor and blend until smooth. Let chill in refrigerator for 2-3 hours before serving.

    Of course, you can always use the age old technique of masking the flavor of the vegetables with a combination of salt, herbs, spices, and butter, although butter should be used in limited quantity to preserve the health effects. Some people even use low calorie salad dressing as a way to add a more vibrant taste to veggies.
